You Will Need:
1 lb lean (at least 80% lean) ground beef
1 packet taco seasoning mix
2/3 cup water
1 can home-style refrigerated biscuits
1 bag shredded Mexican cheese
How to Make:
Heat oven to 375°F. Spray 8 muffin cups with cooking spray.
In a medium skillet, cook beef until no longer pink; drain. Add taco seasoning and water; cook for 3-5 minutes, or until the sauce thickens. Remove from heat.
On a cutting board, unroll dough. Cut the dough into 8 squares. Line each muffin cup by pressing 1 dough square into the bottom, and spreading up the sides. Divide the meat mixture evenly across all the muffin cups.
Bake 14-18 minutes, or until dough is golden brown. Remove from heat and cool for 5 minutes. Using a metal spatula, run around the edge of each muffin cup to remove the cups from the pan. Serve with cheese and other toppings (if desired).
