Instant Pot Meatloaf

This is such an easy recipe and it is always a crowd favorite. I NEVER have leftovers.


What You Will Need:


Meatloaf

  • 1 lb. ground beef

  • 3/4 cup plain bread crumbs

  • 1 egg

  • 1/3 cup milk

  • 1 tbsp Worcestershire sauce

  • salt

  • pepper

  • onion powder


Topping

  • 1/4 cup ketchup

  • 1 tbsp brown sugar


How To Make:

  1. Place steamer rack inside Instant Pot and add 1/2 cup water. Spray 1 sheet of aluminum foil with cooking spray

  2. In a large bowl, mix meatloaf ingredients until well mixed. I put onion powder, salt, and pepper to taste. I do not have specific measurements. Form the mixture into a small loaf, and then place in the center of the foil square. Place foil square on top of the rack inside the Instant Pot; make sure to pull the sides and corners of the foil up, but do not seal.

  3. Secure the lid; set the pressure valve to sealing. Cook on high pressure. I have a Crockpot brand Instant Pot, so I chose the beef setting which will default to a high-pressure setting. Set the time to 30 minutes.

  4. Once done, set the pressure valve to vent to release pressure. Lift foil with meatloaf and place on a cutting board. Remove the loaf from the foil; dispose of the foil.

  5. In a small bowl, mix the ketchup and brown sugar. You can always do this step while the load is cooking in the Instant Pot. Brush the mixture over the top of the meatloaf. Let stand for 10 minutes; cut into 8 slices and serve.
