Dec 24 Impossibly Easy Mini Meatloaves

You Will Need:

1/2 cup of ketchup

1 lb (at least 80% lean) ground beef

1/2 cup pancake mix

1/4 tsp pepper

2 tbs onion powder

1 egg

How To Make It:

Heat oven to 450°F In a large sized mixing bowl,stir 1/4 of the ketchup and remaining ingredients until they are mixed well.

Spray a 13x9 pan with cooking spray. Place the meat mixture on the pan and spread into a 10x4 rectangle. Cut lengthwise down the center and then crosswise into fourths to make 8 mini loaves. Separate the loaves with a spatula, and make sure none are touching. Brush the tops of the loaves with the remaining 1/4 ketchup.

Bake the loaves for 18-20 minutes or until no longer pink.
