Apr 15 Bean Gorditas

You Will Need:

1 can of refrigerated biscuits

2 tbsp cornmeal

1 can (16 oz) refried beans

2 cups of shredded Mexican cheese blend

1 cup lettuce (if desired)

sour cream (if desired)

How to Make It:

Press each biscuit into a 5 1/2 inch round. Coat both sides of the biscuit with corneal and place them on ungreased cookie sheet.

Bake the biscuits at 375°F for 11-13 minutes, or until the bottoms are golden brown. While those are baking, warm the beans on the stove top.

Spread about 1/4 cup beans and 1/4 cup cheese on each round. Bake for an additional 2 minutes or until the cheese is melted. Top with lettuce and sour cream if desired, and fold in half.
